My Next Half Marathon and Bestowed Box Winner

Now that the Nike Women’s Half has passed and I’ve run it healthy, its on to planning for my next race! So what’s next for me? The Brooklyn Half Marathon on May 18th. Now, just to preface, I’ve run this race before. Except the last time I was injured with IT Band Syndrome and ended up having to walk about 4-5 miles of the race. Let me tell you, that wasn’t my favorite moment of racing even though I loved the course. But I still finished that one in about 2:32 despite having to walk because of pain.

So I’m out to get the Brooklyn Half. I am familiar with the terrain (hey, I’m a Brooklynite after all), have run it before, and I have been relatively healthy lately with no signs of ITBS. I not only want to beat my previous time, but also  my current half PR (2:03). On top of it, I’m aiming for sub-2. I won’t really be disappointed if I don’t reach that goal but it would nice. So that’s what I’ll be attempting. Fingers crossed!

I haven’t ran two half marathons this close together before, so I am currently deciding what to do for in between training. The tentative plan is to run once again this week for a longer run (6-7 miles). Then I will be back to my normal schedule next week with short runs and try for a long run of about 10-11 miles. The weekend following that is the race. I’m not sure if this is wrong or right to do, but its what I have in mind. Any tips?

This years race has got me super excited, too. Packet pickup is right near my house (finally I don’t have to trek to the UES) in DUMBO and looks like it will be a great time. Plus the race start is also a quick two subway stops (if that) from my house. I just love this race.. I get to sleep later on race day! I also think NYRR has lots of fun things in store for this race and I can’t wait to see how it turns out. You can always count on NYRR to put on a great, organized event!

Stride Box Winner & Sunday Randomness

This post will be a bit random. I am in the final stretch of studying for my OT licensing exam, so I don’t have too much free time. But I promise I’ll post more consistently after my exam is finally over!

Anyway, my amazing boyfriend recently bought me a food processor, which I have been wanting for a while now. My blender just wasn’t making the cut anymore as I have been getting more and more creative with my baking skills :) First, I am in love with this food processor, its tiny and apartment sized (perfect for NYC spaces) and works great!

So with this new toy I decided on Valentine’s Day to make Karl a cake, but a healthy version of a cake since he is pretty serious about eating healthy. I came across this interesting recipe for a Deep Dish Cooke Pie on the fantastic Chocolate Covered Katie’s blog. I used less brown sugar than she recommended and supplemented it with more Stevia. But I did not slack on the main ingredient–Garbanzo Beans! Yes, you read that right. I was so intrigued by this so I had to make it. It came out so deliciously amazing I can’t even describe it to you!

Karl literally said “this is the best dessert I think I’ve ever eaten.” And let me tell you, in our time of dating we have had MANY desserts. So its safe to say, you need to try this recipe because I also agreed with him. Trust me, its amazing and you’ll love that you won’t feel so guilty eating it. But make sure you have other people home, or you may eat half on your own :)

In running news, I officially signed up for this race..

BK Half

I am so excited for this since 1) I live in Brooklyn and its my home 2) I love May races and 3) I need to redeem myself for my awful performance of this race last year because of my IT Band pain. I am out this year to kick this race in the butt and to run it healthy this time. I am out for redemption!

To start the process, I started the recovery from my awful run last Sunday and went out this week for a short run on a 59 degree day. The weather was unseasonable so I decided to take full advantage of it. I planned on a 3-3.5 miler but ended up pulling out 4.3 miles since I had SUCH a great run.

 I ran around my neighborhood and then down to the Brooklyn Bridge Park near the bridge. I was not in the mood to run the bridge so I ended up staying downtown. They are doing so much amazing work there and it gets prettier and prettier every day. Plus, you can see the progress on the Freedom Tower, which I can’t wait to see completely finished on the outside (should be soon!).

I am super happy to have had such a nice run. Finished 4.3 miles at 8:56/mile and ENJOYED myself, which is the most important part. Soon I’m going to attempt that 6 miler again and see how it goes. Stay posted :)

A Trip to Food Heaven & A Chocolately Reduced-Guilt Granola Bar Recipe

Today I had another physical therapy appointment at Finishline PT in Chelsea. It was a great session and I am really learning to love ART therapy and ASTYM. They are working for me (I think anyway)! I was scheduled to run on the AlterG again too, but skipped it because I’m still a bit sore from this weekend. Also I tweaked my back on Saturday and its not feeling normal yet. Injury-prone is my middle name. Actually its not but it should be. Thanks parents for bad genes. So because I skipped the AlterG, I had some extra time after PT and headed down the block to food heaven: Eataly.

If you’ve never heard of it, its basically the NYC mecca of Italian food. It’s run by Mario Batali and consists of part supermarket, part restaurant(s). According to the website:

“Eataly is more than a supermarket with restaurants. It is an energetic marketplace, an opportunity to taste and take home the products of artisans who till, knead and press to bring you the highest quality products at a fair price. We have assembled the absolute best Italian producers from every region under one roof and the absolute best chefs to cook their wares.”

Although I didn’t eat sit down and anything at any of the restaurants, they looked amazing. They aren’t full-out restaurants but basically little areas where you can try some food from various chefs and vendors. They also sell produce, kitchen supplies, and food on the sides and in areas throughout the building. Its incredible.

Tables you can eat at, they also have bars and tables in other areas. You can also buy whatever you eat to take home!

They have a supermarket area, butchers, cheese-maker people (I don’t think that’s the technical term, but it should be), and shops, which is where I went to buy a few things. The quality of the produce, cheese, pasta, and other items you can get was really impressive. I wanted to try so many things!

Since I decided to only get what I went in for in the first place, I walked away from the heavenly pasta area. Since its all imported and from Italy, its a little pricey which is the only downside. But I’ll go back someday and get some just because I feel like its calling my name. “Megaaannn, cook us!”

I ended up getting a few tomatoes, a huge loaf of fresh bread, fresh mozzarella, and avocados.

I couldn’t wait to try the fresh mozzarella. A real Italian guy made it! I saw him! And the bread was as big as my head…

I’m on a HUGE avocado kick lately and can’t stop eating them. These were AMAZING. I had one for lunch with some fresh bread. Not sure why they are better from Eataly than anywhere else I’ve had, but I’ll have to go back for more to satisfy my avocado obsession.

For dinner, Karl and I had the tomatoes and mozzarella on bread. I originally bought the mozz to make pizza but it was too good and too fresh to bake. Instead we put it on bread with some seasoning. It was the best I’ve had.

Make a trip to Eataly, you won’t regret it! Their products really are high quality. Karl and I are thinking of going back soon to eat at the restaurants inside. I’ll let you know if we do :)

Remember a few weeks ago when I made Cranberry-Nut granola bars? Well I made them again today but changed the recipe around to make it more of a chocolately, dessert-like bar. I’m posting the recipe again with the updated ingredients. The process of making them is the same.

Ingredients:
3 tablespoons butter
1 (10 1/2-oz.) package mini marshmallows
15-oz. of Bear Naked heavenly chocolate granola (or I used 12 oz granola + 3 oz Go Lean Crunch cereal)
3 cups crisp rice cereal
4-5-oz. ground walnuts
2 tablespoons ground flax (optional)
1 teaspoon salt

Great granola

1. Use a food processor or blender to grind the 15 oz. of granola until finely ground. Also grind up the walnuts.

2. In a bowl, combine the granola mixture with 3 cups crisp rice cereal, the walnuts, 2 tbsp of flax (optional), and 1 tsp. salt.

3. Melt 3 tbsp of butter in a covered pot over low heat. Add the mini marshmallows and cook until melted, stirring occasionally. Then remove from heat and stir the granola into the marshmallows.

4. Press the mixture into a buttered pan (I used PAM to spray it). You may have to use your hands to spread it… its sticky! Let stand 1 hour then cut into (1 1/4- x 3-inch) bars.

These came out really good and are sweeter than a usual granola bar. I made them because I wanted something that I could eat for dessert or as a snack that wasn’t really unhealthy. These are perfect. The main ingredient is Bear Naked heavenly chocolate granola, which has 130 calories and 3.5g of fat in 1/4 a cup. Plus, it has some protein and also fiber (especially if you put in flax). Since this recipe makes A LOT of bars, you can make these last for a while. Enjoy!
